Homemade Muffins: 1 Muffin Batter, 5 Mix-ins!

I found this recipe while looking for ways to make more homemade food items I would normally purchase in the store. I love this because it’s essentially 5 different muffin recipes in one and you can mix all of the dry ingredients ahead of time for faster prepping. This lady at Sweet and Savory Eats is where I found this recipe. The recipe didn’t come with cooking instructions but I put mine in at 400F for about a 1/2 hour and checked them every 5 minutes after that. Once a toothpick is inserted into center and it comes out clean, they’re done. Enjoy!

For the dry part of the batter you will need:

2 cups flour
1 T. baking powder
1/4 cup sugar
1 t. salt



For the wet ingredients you will need:

2 eggs
1/2 cup olive oil
1 cup of milk
1 1/2 t. of vanilla extract

Now it’s time to choose your mix-ins.

1. Cinnamon Sugar:
Sprinkle muffin tops with a mix of 3 T. sugar and 1 t. cinnamon.

2. Banana Chocolate Chip:
Mix 1 mashed banana and 1/2 cup of chocolate chips.

3. Apple Pie:
Mix 1 t. of cinnamon, 1/2 t. of nutmeg and 1 cup chopped apples.

4. Oatmeal Raisin:
Stir in 1 cup raisins and top muffin tops with rolled oats.

5. Lemon Poppyseed:
Substitute 1 t. of lemon juice for the vanilla extract and add 2 T. of Poppyseeds.

I have personally tried the cinnamon sugar muffins and the Banana Cocolate Chip muffins and they came out great! Don’t forget to share your results with me!

I like to mix up batches of dry ingredients of some of our go-tos (muffins, granola bars, etc.) so it's easier to bake when I'm ready. That means I'm always on the lookout for something like this, where I can mix up the initial dry ingredients without having to commit to a certain flavor yet.
